I love raw food. I love knowing that everything I put into my body is natural, made from the earth, and nourishes my body with the nutrients I need to maintain optimal health.
This is one of my favorite raw recipes.
Zucchini Pasta with Cherry Tomatoes

8 oz cherry tomatoes
1 clove garlic, thinly sliced
1/4 cup raw walnuts
2 tbsp torn fresh basil, plus leaves for garnish
2 tbsp extra virgin olive oil
1 zucchini, sliced lengthwise 1/4 inch long strips
Toss all ingredients together with 3 drops of doTERRA lemon essential oil (more if you so desire, you can even put a couple drops of basil essential oil if you really want to enrich the essence of basil). Let stand for 20 minutes before serving.
